This weekend, we are re-doing the floor tiles in the downstairs of the cottage where we are living, and by "we," I mean Nico, his brother, and dad. While those three guys tile away, I'm hanging out with my mother-in-law and learning delicious new recipes to share! Last night, the menu was salmon and leek quiche (YUM) with chocolate and pear pie for dessert (DOUBLE YUM). This dessert is about as easy as they come!
Use your favorite crust recipe or give my mother-in-law's "saucepan crust" a whirl:
2 cups flour
9 tablespoons butter
2 tablespoons water
2 1/2 teaspoons baking powder
4 1/2 tablespoons sugar
1.) Melt the butter in the saucepan and mix in the sugar and water until fully blended together.
2.) Remove from heat and mix in the baking powder and flour gradually.
3.) Transfer to the pie dish and using your hands, press the dough evenly across the bottom of the dish and up the edges.
Filling:
Approximately 3/4 cup dark chocolate (give or take, this measurement is flexible)
Canned pears cut in halves (enough for one layer)
1 egg
A few spoonfuls of sugar
A good pour of cream or milk
1.) Break the chocolate into smaller pieces into a saucepan, add a little bit of water to prevent sticking, and melt on the stove or in the microwave.
2.) Pour the melted chocolate onto the pie crust and spread evenly.
3.) Drain the canned pears and place the halves in a layer on top of the chocolate.
4.) In a small bowl, beat the egg, a few spoonfuls of sugar, and a healthy pour of cream or milk. (The
consistency should be similar to the liquid egg mixture when you are making scrambled eggs.)
5.) Pour the egg/sugar/cream mixture over the pears so that the liquid flows everywhere.
6.) Bake at 400° for 30-45 minutes, or until the filling is set and the crust is nicely browned.
